Matzo BallThese lovelies can go into anything you need a "ground beef" replacer. Of course when you cooked them you would just crumble them, or you could just throe the mixture right in there, in this case, we have Spaghetti and Matzo Balls, really easy, really delightful. nice throw back to childhood comfort food.
Ingredients:1/2 cup matzo meal (found in the kosher section at your super market generally)
2 Tbsp corn starch
1 tsp salt
2/3 cup veggie stock or water (if your veggie stack has a high salt content, cut out the salt from the ingredients)
Directions:1. In a bowl stir in matzo meal, starch and salt.
2. Add stock and stir well. Cover and set aside in refrigerator for 20 minutes.
3. When chilled roll 1 Tbsp at a time into balls, dip your fingers in water prior to doing this to prevent the mix from sticking to your hands. Repeat until there is no mixture left.
4. Drop (carefully so you do not get burned) the balls one by one into boiling salted water, reduce heat and cook until they rise to the surface, stirring gently so they do not become stuck together. Cook for 10 minutes after they float to the surface.
Then smother those bad boys with pasta sauce and put on your spaghetti with nutritional yeast.

Hm. The boy made me try matzo over passover, and it def wasn't something I'd wanna eat... he swears when you make it in other forms (like a matzo ball for instance) it's actually really good.. but iunno...
Fact: I love huge meatballs in mah skettie. They always amuse me haha
@live_for_love@xanga - the first time I made them i spit them out, they were way way way too salty, it was a nightmare. Apparently you can cook them so they are mushy or firmer, I think firmer would be better. They turned out a bit of both here.

I actually love this stuff. I spent a whole year eating nothing but this (in various forms) and drinking nothing but water.
@arenadi@xanga - Wait, you spent an entire year eating nothing but matzo?
Anyway, I like matzo balls. The key, in my opinion, is to make sure they're not too heavy and dense. Some matzo balls are like cement. I prefer when they're lighter and fluffier.
@NikBv@xanga - Yeah, long story. I spent about a year some time ago being very monk-ish and living as an ascetic. I'll probably write about it at some point haha.

@NikBv@xanga - Nope! Just plain old Matzoh like in the old days, haha. I know, considering what I eat normally, this is a big difference. That was the point though. I wanted to live a life denying myself of worldly pleasure of any sort.
