Oatmeal Cranberry Cookies
You can easily make these Oatmeal Raisin if you would prefer, or add chocolate chips (I would do 1/8 cup chips and 1/8 cup cranberries because this mix is quite dry). I personally can not stand raisins, but I love cranberries. This recipe also calls for quick oats, if all you have is regular oats pulse 3/4 cup in a food processor for about 10-15 seconds. You want the oats to break, but not turn into flour.
Ingredients:3/4 + 1 Tbsp spelt flour (if using all purpose use 1/2 cup, add mote if batter is quite damp)
1 tsp baking powder
1/4 tsp baking soda
1/2 cup quick oats
1/4 cup raw sugar
1/4 cup dried cranberries
1/8 tsp salt
1 tsp cinnamon
pinch of nutmeg
1/4 cup maple syrup
3/4 tsp black strap molasses
1 1/2 tsp vanilla extract
1/4 cup canola oil
Directions:preheat oven to 350f1. In a bowl combine flour baking soda and baking powder, stir until well combined.
2. Add quick oats, sugar, cranberries, salt, cinnamon and nutmeg, stir until well combined.
3. In a separate dish add maple syrup, molasses and vanilla. Mix well, then add oil and stir until combined.
4. Add wet ingredients to dry and stir until just mixed. The batter should be delicate enough to crumble but wet enough to stick if left undisturbed.
5. Spoon batter on to prepared baking sheet, press each circle of batter lightly to the pan. Put in the oven and cook for 10-11 minutes until browned around the edges. Do not bake longer or they will dry out and crack. Let cool and enjoy. Makes 12 cookies.

Ooo... this is actually one of my favorite cookies. I also don't care for Oatmeal Raisin, but Oatmeal Cranberry is wonderful stuff.
mm looks good..oh what is the difference between raw sugar and the regular sugar that i have right now in my cupboard?
@nooitzben@xanga - white sugar isn't vegan because they cfilter it by running it over charred animal bones. You can still use it if that doesnt pose a problem for you, we still have some in our house, but it is better for you and animals if you use a raw unfiltered sugar, or dark sugars like turbinado (it's really good.)
@karmavore - they run if over charred animal bones? wow is that necessary to make sugar?..i never even knew that..sort of reminds me of how gelatin is made from the insides skin and bones..ugh..shocking.
@nooitzben@xanga - I don't assume it is necessary, like the fact they now put some sort of milk product in everything, but they do it. If you can find beet sugar, that stuff is white, delicious and comes white so they don't need to refine it with charcoal. They unfortunately however do not tell you the kind of sugar in commercial packaging. You are usually safe with sugars that are blonde and brown in colour.
