  • Mac and "Cheese"

    Mac and "Cheese"

     

    I haven't had mac and cheese in a long time... this is because vegan cheese substitutes fall short. However, today I challenged myself to make a sauce out of nutritional yeast over some back and for chatter with Chow. The result is truly yummy, and is done in less time then it takes to cook macaroni. So it is a late I Really Like Food Pasta Challenge post.

    Ingredients:
    1/4 cup flour
    1/4 cup nutritional yeast
    1/2tsp salt
    1/4 tsp garlic powder
    1 cup water
    1/8 cup margarine

    Directions:
    1. Combine all dry ingredients in a sauce pan.



    2. Add water and stir for one minute over medium heat until sauce begins to thicken.



    3. Remove from heat and add margarine, stir until well combined.
     



    4. Add to pasta, top with pepper and be delighted!

     

    This was seriously wonderful, a nice easy comfort food (boy did I need it tonight) and takes the same amount of time as making commercial Mac and Cheese does. The "cheese" gets sticky as it cools, in a stringy cheesy way as well!
