Mac and "Cheese"
I haven't had mac and cheese in a long time... this is because vegan cheese substitutes fall short. However, today I challenged myself to make a sauce out of nutritional yeast over some back and for chatter with
Chow. The result is truly yummy, and is done in less time then it takes to cook macaroni. So it is a late
I Really Like Food Pasta Challenge post.
Ingredients:1/4 cup flour
1/4 cup nutritional yeast
1/2tsp salt
1/4 tsp garlic powder
1 cup water
1/8 cup margarine
Directions:1. Combine all dry ingredients in a sauce pan.
2. Add water and stir for one minute over medium heat until sauce begins to thicken.
3. Remove from heat and add margarine, stir until well combined.
4. Add to pasta, top with pepper and be delighted!
This was seriously wonderful, a nice easy comfort food (boy did I need it tonight) and takes the same amount of time as making commercial Mac and Cheese does. The "cheese" gets sticky as it cools, in a stringy cheesy way as well!

Oh awesome, I'm glad it succeeded :) The finished product looks good. I think this is a "cheese" sauce that's worth talking about.
@chow - I has dreams about putting this on brussel sprouts and cauliflower last night. Brussel sprouts are seriously one of my favourite foods, and I used to request them with cheese sauce for my birthday as a kid all them time... now I can put "cheese" on them again!!!
@purpletulips_goround@xanga - it was quite delicious, I put too much garlic powder in mind (the recipe is the reduced amount) and I still could not stop eating it.
@karmavore - I think this would be great to share with the greater IRLF vegan community; maybe if you did the brussel sprouts and cauliflower and did a single post for IRLF posting talking about Nutritional Yeast and how it can be used as a "real" tasting cheese sauce?
I think this would be helpful to a lot of people. :)
@chow - I think I likely will do such a thing. I was planning on writing a post dedicated just to nutritional yeast at some point. Now that I have used it in more than its basic form I guess it is time =D

@ElusiveWords@xanga - it tasted incredibly cheesy, I was so thrilled because in my omni life time I was a cheese addict, and cheese sauce was my specialty on holidays.
